I like to cook the kind of food I like to eat. Koffmann’s at The Berkeley is a more relaxed, informal style, while still embracing my classic, provincial, French culinary roots.

What are the key factors to running a successful restaurant?

I think it is important to work hard, have drive and be passionate.

What is the dish you are most proud of and why?

People will remember me for the pig’s trotters. It will be on my tombstone, but I feel I’ve done so much more.

In your opinion, how has food in the UK evolved over the years?

It has evolved tremendously. There are better ingredients, and restaurants are becoming more open minded of their customers.

Who influenced you to become a chef, and how did you train?

I was influenced by grandmother, Camille. I went to cooking school in Tarbes, and the rest is history!

You opened at The Berkeley in What has the response been like?

The response has been wonderful. I’m just happy to be back behind the stove, cooking for people who love to eat.

Combining a rustic gutsiness with haute cuisine, Pierre Koffmann knows how to combine tastes and flavours like no one else.  He cooks the kind of food he likes to eat; the food of the French countryside and of his grandparent’s farmhouse kitchen in rural Gascony.

Pierre Koffmann is regarded by many as the greatest chef to have worked in the UK. He grew up in Gascony in the south west of France where he was inspired from an early age by the local peasant dishes cooked by his grandmother. In he came to the UK, not for the food but to watch England against France at Twickenham. He soon met the Roux brothers and began working at Le Gavroche. He then moved to head up their new restaurant, The Waterside Inn in Bray, which quickly gained two Michelin stars. In he opened his own restaurant, the legendary La Tante Claire in Chelsea where he earned three Michelin stars before finally closing in In a brief pop-up re-run of La Tante Claire on the roof of Selfridges inspired him to come out of retirement and open Koffmann’s at The Berkeley, serving the simple, delicious Gascon food of his childhood.
